The only way to get past them is to speedrun until that point. These doors close permanently after a certain amount of time. It also grants brief moments of invincibility. Rolling allows you to cover a long distance quickly. However, the much more valuable manoeuvre is to roll. Moving will obviously allow you to dodge attacks, the same for jumping. The most important tip for survival in Dead Cells is to constantly move.
